Homemade Pandesal
I love Pandesal in the morning, but this bread can actually be eaten at any time of the day. Having ready ingredients at home when you feel like baking a piece of bread, is a wonderful idea, soo I strongly recommend getting baking goods in stock.

Ingredients
2 cups all-purpose flour
2 cups bread flour
1/2 cup white sugar
5 tbsp melted butter
1 tsp baking powder
1 1/4 cups fresh milk (lukewarm)
1 pouch rapid-rise yeast
1 cup bread crumbs
1 tsp salt
1 egg
1 tbsp cooking oil
Instructions
1. Combine the yeast, sugar, and milk and stir until the yeast and sugar are fully dissolved. I’ve chosen milk instead of water because it just tastes better, but you can always use lukewarm water instead of milk.
2. In the mixing bowl, combine the dry ingredients: flour, sugar, salt, and baking powder then mix well.
3. Add the egg, butter, cooking oil, and yeast-sugar-milk mixture in the mixing bowl with the dry ingredients then mix again until the dough is formed. You can use your hands to mix the ingredients effectively.
4. On a flat surface, knead the dough until the texture becomes fine.
5. Mould the dough and put it back in the mixing bowl, cover it with a damp cloth, and let the dough rise for at least 45 minutes to 1 hour.
6. After the dough has risen, transfer it to a lightly floured working surface. Roll into a log then cut into four to six equal pieces. Take another portion of the dough, roll again into a log, and cut it into similar pieces, repeat this step until all the dough is done.
7. Roll each piece of dough in breadcrumbs then arrange it on a baking tray for at least an inch apart, you don’t want it sticking together when it rises later on.
8. Leave the dough in the tray to rise again for 15-20 minutes.
9. Preheat the oven to 375 degrees Fahrenheit (190 degree Celsius) for 10 minutes. If using a fan-assisted oven, reduce the heat according to the instructor’s manual.
10. Bake for 20-25 minutes or until nicely browned outside.
Important Notes:
I would recommend stocking up the ingredients but marking up expiration dates, because this recipe is ideal when prepared early in the morning, to have a freshly-baked pandesal for breakfast, partnered with your hot coffee. :)
Homemade Pandesal - Recipe 2
Ingredients
2 1/4 tsp active dry yeast
1 1/4 cup milk (warm)
2 1/4 bread flour
2 1/4 all-purpose flour
1 1/4 tsp salt
3 tbsp butter
1/3 cup sugar
1/4 cup sugar added to milk
2 large egg
Breadcrumbs to roll
Baking Instructions
Warm up the milk and soften the butter.
Mix the 1/4 cup of sugar and pack of yeast together with the warm milk. Wait for the bubbles for 8-10 minutes, then it aside.
While waiting for the yeast mix, start the bread/all-purpose flour mixture- along with salt, sugar, eggs, and butter.
Note: Make sure that the butter is already softened before you mix it with the ingredients above.
Add the yeast mix from prior and continue kneading either manually or stand mixer.
In a bowl, put a little bit of oil, put the kneaded pandesal dough mixture into it, and cover with plastic wrap for 2 hours and 30 minutes. If you used a rapid instant yeast, an hour should work.
Slice into small equal balls the pandesal dough and roll on breadcrumbs then put on a baking tray, cover with a kitchen towel, then let it rise again for an hour.
Uncover then bake your pandesal. Serve fresh.

Overnight Pandesal - Recipe 3
One proof overnight dough
prepare in the evening, bake in the morning
Ingredients & Baking Instructions
1 cup warm water
1/3 cup sugar
1 tsp salt
¼ tsp instant yeast
Mix well
3 cups bread flour or all-purpose flour
Mix dry ingredients until dough forms
Add yeast mixture
Add 1/3 cup melted butter
Mix until butter is fully absorbed
Transfer to a lightly floured counter
Work on dough until smooth
Divide into 15 equal pcs
Round and smooth into a ball
Dredge in bread crumbs
Cover and let it proof slowly for 8 hrs or overnight
Bake in a preheated oven at 350F for 25-30mins
